A Package Deal.....

So I forgot to write in November and just barely realized it, so to finish the year of monthly blogs, you're getting a double dose....

I got kinda of quiet to close this year out.  It wasn't a depression, it was more of a massive inward reflection time and I do not regret it at all.  I cut back on things, but did not completely disappear.  I hung out with AMAZING people and had fun, but I said no to the chaos.  It was WONDERFUL!

I'm going to confess something, I am so over the commercialism of the Holliday season.  The ads that start WAY too early, the store displays in OCTOBER, the BUY, BUY, BUY for one day.  I struggled with finding my Christmas spirit when I was so annoyed with that aspect of the holiday season.  It's something I need to work on...

I did my Christmas agreements again this year and that was nice and kept some traditions that I love and enjoy doing.  I spent a lovely Thanksgiving with extended family and yes, stayed out of stores all weekend long.  I connected, not shopped.....



I think that is what this past year has been about for me, connections....  How to maintain, how to re-establish, how to just connect in a world that seems to be about the go, go, go..  Letting go of what people think and just doing what feels right.  I know that for the most part I don't go with the flow much anymore, I'm finding my own current and my wish for you is that you find your own.......

Oh October....

Hi...

A very exciting migraine update, I have not had a migraine since the August disasters!!!  This is soooo huge for me.

The Utah Football team has stopped giving me ulcers and started giving me reasons to cheer-the last three games we have won and have scored at least 40 points.  Go UTES!

It wouldn't be a monthly update without a Red Butte Garden mention, so here it is, I volunteered a couple of times at Garden after Dark this month.  It had such a cute and informational theme this year, visitors attended Oak Lore Academy (it was a twist on Harry Potter, but without all of the licensing issues).  They attended classes such as Wand Theory (where they got a wand), Potions, Magical Creatures (where in the Herb and Fragrance gardens, the staff had made creatures and as a really cool addition, HawkWatch was there with birds.  I saw a really cute small owl and a Merlin) and finally (and how could there not be at a Conservation garden) Botany.  Our villain for the evening was Myrtle Spurge, a noxious witch and ever so conveniently an invasive weed that is attacking the Wasatch front.  This is such a popular event and every year it just seems to get better.

Now it's time for you to have your eye roll or face palm moment and say Oh, Melissa......during October, I went on a massive cooking and planning binge.  The result 16 freezer crockpot meals are hanging out in my freezer ready to go, along with 6 mini lasagnas, taquitos, and breakfast burritos.  Needless to say my freezer is full, but on days that are crazy or nights that I don't feel like cooking I have a healthy home cooked meal ready to roll.........

Next moment, thanks to Pinterest (I know, I know, I need an intervention) I taught myself a new knitting technique.  It's called Intarsia and basically it's multi colored knitting.  It is the most basic of multi colored knitting but hey I can do it now....and it wasn't as difficult as I thought it was going to be.  I wish I had done it sooner....

Speaking of knitting, I dropped off the animals, monsters and other assorted creatures that my Mom and I have been knitting throughout the year to the Utah Highway Patrol for their Teddy Bear program.  They were overrunning the place so we decided not to wait until December.

A bit of sad news....last night I only had 15-20 Trick or Treaters, but they all loved the Play Doh they got.  I was a bit nervous to switch it up, but last year I had soooooooooo much leftover candy that I wanted to do something different.  Enter the Play Doh and this year my leftovers will be going to Toys for Tots in a couple of weeks instead of my hips.  :)  Win Win....

A few random items before I go.... CenterPointe Theater knocked it out of the park with their production of Ragtime!  Bacall continues to amaze and spread joy.  Meeko is actually visiting people who stop by and not hiding.  If you are looking for a book to read, try "The House on Mango Street' by Sandra Cisneros.  It's a short, about 100 pages, coming of age novel of little vignettes.  I have no idea how I have missed it until now.    One last plea, Now that it's November, please vote......

Resolute....updated...

A couple of days ago on Facebook, a friend of mine defended New Year's Resolutions in a succinct and powerful way.  She posted,

 "It has become fashionable to put down the tradition of making New Year's Resolutions.  To be cynical ('you won't stick to them').  To be judgmental ('why do you need a date on the calendar to decide to change?').  No.  Make your best New Year's Resolutions ever.  Infuse them with resolute sacred intention.  Claim them:  "You know what?  THIS is the year that I will....."  And then lean in.  Right now.  This is a ritual that we actually need.  Love your resolutions and encourage those of your loved ones.  xo"

That post summed up better than I have ever been able to express why I still make Resolutions.  It's a chance to challenge, grow, explore and build upon my experiences in my life.  People ask 'Why?', and I say 'WHY NOT?'  Because even in the missed attempts and errors, you will still learn and move forward.

So with that, I hereby present my 2017 New Year's Resolutions.....

1.  Limit social media and screen time.

Facebook, Instagram, apps and all of that have a place, but throughout 2016 I felt them going a bit sideways sometimes and it made me realize that at times, I was not in control of it and it was starting to control me.  Not good.  With a lot of my groups that I get together in real life communicating and organizing things on Facebook, I can't leave, but I can make sure that I set limits and involvement.

Update:  I set limits and found my balance with social media.  I found my reason for being on them and just as importantly I found I can be without them.

2.  Write letters, cards, in my journals, etc.

Picking up a pen and writing....what a concept!  This came out of a realization from a 2016 resolution that I found really value something hand written, so why shouldn't I spread this to others?

Update:  As you know my absence from this blog, I found my voice off line this year.  I also found that I LOVE drawing little doodles on envelopes I send, so now I look for a reason to send a card to someone.

3.  A New (to me) Restaurant a Month

I live in an insanely wonderful neighborhood for food!  The local and healthy options outnumber fast food options.  While I eat at the local options, I still have a tendency to eat at the same one over and over again.....  Eating good food and supporting local businesses, sounds like a good deal to me...

Update:  I missed a couple of months, but had multiple restaurants in others, so this was a success.  I am working off of a list I found and will continue this in 2018.

4.  Be a tourist in my town and state

This one started simmering in my mind in July when some family came to visit and I had done NONE of the things we were suggesting for the group to do.  Really?  Not only will I have a better idea on what is worth it and what is not, I will break up the mundane of day to day life.

Update:  I went to more museums, attractions and events this year than I have in multiple years.  What I found, SLC has a lot to offer.  What I learned, if you want to attend an attraction (zoo, aquarium, etc) more than once in a calendar year, a membership will pay for itself and then you can go more than once!

5.  Take time for self care

I admit I am not always the best at this.....  I don't mean taking a spa day, I mean taking 5 minutes to breathe or turning off my phone during the day or any of the other little things we can do for ourselves to calm, protect, energize or whatever else we need.   My resolution of last year of a daily walk started this realization, so I decided to expand a bit.  The reasoning behind this is the classic airplane safety instruction, 'Put your own oxygen mask on before helping others.'  No matter our situation in life, married or single, with children or without, young or old, we all need to take care of ourselves.

Update:  Just having this as a reminder this year helped.  I journaled.  I rested.  I knitted.  I let go.  I hung on.  Self care took many different forms and really didn't take time away from other things, in fact, I think it opened up time, because it helps you figure out what is important.

6.  Do at least 3 30 Day Challenges

I consider 30 Day Challenges mini resolutions.  I have a couple picked out-- a cardio/exercise one, a photography one, and a self care one and will probably add another.  It's a way to focus and make a jump forward in things in my life.

Update:  I LOVED this! I did a couple of exercise ones, a gratitude one, a happiness one and considered all of them successes!  They ended up being jumpstarts for new habits.

7.  Travel solo

There is something freeing in travel to begin with, but to do it on my own (not meeting a friend or family member somewhere, but knowing absolutely no one) seems both freeing and comfort zone pushing at the same time.  I have an idea where I am going to go, but am still working on the details.

Update:  didn't happen, but I'm ok with it.  In 2018, more solid plans are in place.

8.  Reduce my throwaways...one and done, straws, bags, etc.

I'm pretty good about using reusable grocery bags, but I wanted to do something tangible for the earth and environment and reducing my plastic use seems like a good place to start.

Update:  I changed my toilet paper, it's no longer made from trees and everything about it is better for the environment.  I have pretty much eliminated ziplock bags thanks to Bee's Wrap and food grade silicone bags.  I do not use disposable utensils, I keep a set of recycled bamboo utensils in my purse along with a glass straw.  This was a mind set change and it was a daily thought pattern of "What can I do to eliminate my throwaways?'  and it is now a habit that I will continue.

9.  Do something once a month out of my comfort zone.

I have a pretty eclectic life, but still have a tendency to stay within my comfort zone.  I'll probably vary the way I do this, but if you never try something, you'll never know....

Update:  Every month, something cropped up that challenged me a bit.  Some were easier than others, but others took a bit of courage.

10.  Bucket List items (shocker I know, as this has been on the list for the past 4 years)

It always surprises me which items get done each year and which ones that I had planned to do don't, but every year, I have crossed items off my list.

Update:  A trip to Rocky Mountain National Park was the only one that I really expected to do, but it wasn't the only one that was completed.  I love having a list of things I want to accomplish in life...

It's funny, I say that I need 10 Resolutions, but the last couple of years, I have ended up at 10.

10 Random Things...

My writing binge of June has faded away, and ideas have come in but not enough for a whole blog, so I decided to revive a 10 random things entry, so July doesn't fly by without at least one.

#1.  Holy Cats has it been a HOT HOT and DRY summer!  It rained for about 5 minutes the other day and I was excited as a kid at Christmas!

#2.  Ice Blocks are back in stores...  I searched and searched last summer when family was in town last summer to no avail, this year, as they were visiting again, I FOUND them!!  We were able to revive a summer time tradition of tempting fate and injury and ice blocking down the hill at Sugarhouse Park.


#3.  Did you know that at the Winter Olympic Park in Park City you can do extreme tubing?  You cruise down the ski jumping hills and can reach speeds of 50 mph...  Here's a little video.. and I did it!


#4.  Sometimes you need visitors to come to town to become a tourist in your own area again.  It's fun  to do the things that on the surface seem touristy...  My tip, don't wait until someone comes to town, get out and explore your area so you know the really fun stuff.

#5.  I've started knitting stuffed animals to giveaway.  I'm leaning towards donating them to 'The Teddy Bear Cops Program' which gives them to cops for them to give to kids in accidents and other stressful incidents.  I've got to check to see if SLC has a program set up, if not I may start one up....

#6.  My tv viewing has plummeted this summer and I haven't even missed it....  It's going to be interesting to see what happens in the fall.

#7.  I have joined the ranks of Red Butte Garden Volunteers...  I am a second generation volunteer as my Mom is a volunteer as well.  I have done one shift and had a wonderful time.  I can't wait to have more opportunities to get involved.

#8.  Miss Bacall's favorite summertime activity is hanging out on the porch, so it has been a lot of fun to talk to all my neighbors and dogs as they stroll past....

#9.  My health journey is an adventure....  I am recovering, not as fast as I would like, but I am recovering.  There have been a few hiccups, but no major setbacks.  The main thing that has come out of this whole thing, I LOVE my medical team.  They are a mixture of traditional and for lack of a better word non traditional approaches and they work together!

#10.  Don't go into shock, but I am still rolling forward on my New Year's Resolutions!!!  My pushups are almost there!  My bad habit just got another reason to stay away.  My book challenge is going nicely, and for the most part, I have enjoyed the books.  I've seen movies in theaters!  My food challenge is keeping me on my toes in the kitchen.  My daily walk has had some misses, but has started a wonderful routine that connects me to my neighborhood.  The Weird Holidays have been SO MUCH FUN!!!!  and I now have others giving me suggestions now!

Taking Time....

Over the past couple of months, I have been trying to become more aware of things in my life that I had not been acknowledging or taking the time to notice and appreciate....

It's a bit like being a tourist in your own town, neighborhood, or even your own home and not taking for granted the things you see on a daily basis.  Living in the moment.....and acknowledging all that is in your life.

In my closet, I turned my hangers around until I wore the clothing item and then switched them.  The result, feeling like I had a whole new wardrobe, when in reality all I did was stop wearing the same clothes over and over again...

In the house, I went through items and rearranged and switched up the decor.  It seems like a new space and changed the energy, and once again no money spent...

Then there are the memberships, opportunities, parks, and the like that are in your area,  Red Butte Garden is one in mine and my amazing Mom volunteers once a week there, so it's not like it isn't on my radar on a regular basis.  As a benefit for volunteering, she has been given a membership to the garden that she has generously included my name on, so I have free admission.  Ask me how often I visit the garden......maybe once a year, if that.  Isn't that just sad?

In April, mom kept saying how beautiful the garden was and that we needed to go up and visit, and we actually did!  Wandering around and enjoying the spring blossoms made us both realize that we should visit more often just to appreciate the gardens, so we made a goal of visiting the garden once a month for a year and  sometimes you have to write it down and hold yourself accountable.  It seemed weird to write it down and make a goal to do something that you enjoy, but I hadn't been visiting, so maybe this will get a habit going.. The benefits of going to the garden are endless....time together, seeing the different plants in bloom, getting out in nature, having a nice walk, and I could go on forever, so it is worth making it a focus.

I also took my camera, because I have been trying to take more photographs while at home, not just on vacation, so I did.  It was a pretty smart decision.....

As we made our second visit in May, something immediately came to our notice, the blossoms of April had given way to the blooms of May.  If we had not visited in April, we would of missed the crab apple, lilac (many different varieties, all of which made me sneeze) and all of the other wonderful things we saw.  I barely recognized the crab apple trees without their blossoms..


Life, as we all know, runs in cycles, but I don't know about you, but sometimes when you are in the thick of it, you do not always take the time to notice the little beauties that occur on a regular basis in our lives.  I think that is the reason that I am such a fan of gardening and nature is that the second you step into it or work in it, you are immediately reminded of the little things that you might of missed otherwise....even the weeds, there is a big lesson in weeds.  :)

Visiting more often with the intention of appreciation, I am noticing things that I never had noticed before.   I was drawn immediately to some beautiful purple blooms in the Herb garden and was SHOCKED when I saw they were chives.  I never knew they bloomed like that, I always cut them and use them before that happens.....

It's not just Red Butte that has me slowing down and taking time to notice, I've been doing it in my neighborhood as I amble with Bacall, my dog.  Flowers, squirrels, birds, trees, and yes, the neighborhood dogs have all caught my eye... And since I'm not appearing to be in such a rush, I've been talking to my neighbors more.  It snowballs and becomes something bigger without even really trying.  I love that....

I'll end it with this, a plant that grows in my front yard.  The beauty is right there everyday, all I have to do is look....

Take some time to notice what's around you, or what you have purchased and never used, you might just be surprised at the results...

Goiter Free in 2016

I'm betting you read the title and went 'Huh? What in the world is she talking about now?'.  I promise by the end this will all make sense and how iodine played a major role.

Yes, iodine...

It started with a simple statement in August of 'I just feel off....'  It wasn't even anything that I could put my finger on,  just something within me just kept saying something was not right, so I went to the doctor and they found nothing.  I chalked it up to everything that had been going on and vowed to take better care of myself and I did, but I never lost that 'off' feeling.

I won't go into all of the details, but let's just say there was a cycle of colds and flu's and each time my energy levels sunk to a new lower level of  normal.  I went to the doctor multiple times, but the cold or the flu got the attention and the treatments.

By the end of February, my energy levels were in the dump.  I felt like crap and was not in a good place health wise.

And then, it got worse....
they call it brain fog, but it's way worse than that...
I couldn't function.  I couldn't read (and if you know me at all, you know that was the straw that broke my emotional back).  For a couple of weeks, I didn't feel comfortable driving because I started feeling overwhelmed at all of the things I had to process at once, so I stopped driving.  I got rides to work, made friends drive when I went out, and then I stopped going out all together.....

Thankfully, a friend, around this time, suggested that I go to the doctor and beg them to run more comprehensive tests, especially the TSH, a test to check the individual thryoid hormone levels,  because it looked like I was going through what her sister had gone through...

I had to fight to get it done, but when the test came back all of my levels were messed up, dangerously messed up.    And it explained everything, all that I had been feeling for a long time, for you see, most thyroid issues don't happen overnight, it is a long slow decline, which is one of the reasons it takes so long to get a diagnosis....

Now here is the part, where I tell you some very frustrating news, for a lot of people, there isn't a definitive reason why their thyroid goes crazy.  There might be contributors, but one specific cause, not so much.  I have a family history, but that didn't guarantee that I would have issues, it just gave the doctors something to look into...  And it gets even more frustrating, treating the thyroid isn't a one size fits all treatment plan, it can take a long time to get the right medication, dosage, and health plan.  (If you really want me up on a soapbox, ask me about the #1 drug prescribed for thyroid issues).

My tale is a bit different, due to the fact that not only was my thyroid a mess, my entire endocrine system was in trouble and that got them doing a bit more investigating and research and asking me questions, and for that I consider myself very lucky.  A simple question of "Do you use salt?" and my response of "NEVER, I can't stand the stuff...." led to questions about the foods highest in iodine which resulted in an urine test which is the best option for testing iodine levels  and it showed that I had NO traceable amounts of iodine in my system which is very bad for the thyroid.

Iodine is ESSENTIAL for the thyroid to function properly, granted it's a delicate balance of if you have too much it can mess up the thyroid and if you have too little it can't function, but ESSENTIAL none the less.  I am in the small minority of not getting enough, and hence my goiter title because a goiter is the last symptom in low iodine levels.  Here is a LINK that has a list of iodine rich foods and what iodine does for you.  One thing to remember, your body can not produce iodine, so it HAS to come from your diet.  I ate some of the foods on the list, but not consistently enough to maintain my levels.

So, you see, my intuition was right, there was something wrong...
it just took a while to find it.

It's going to be a slow, steady upward climb to normal for my body, and it has to be done that way, because adding too much iodine back in my system at once can be as damaging as my low levels, but I already feel soooooooooooooooo much better.

I'm also thinking, now, that it may of been a good thing that I hit the rock bottom the way I did or they may of missed the iodine part of my problem, which was my key to solving my health issues.

So, why did I write this blog?  For one simple reason, these bodies that we live in are in a delicate balance and if something goes even a little off, it can have dramatic effects.  You are your best indicator when something is wrong.  Trust your gut, intuition, or whatever you may call it and if you have learned not to listen to it, start trusting it again.  Relearn to listen.  Your quality of life depends on it.

Now comes the part, where I remind you about the whole balance thing, do not panic and start self diagnosing and treatment planning, so do not just add an iodine supplement without your doctor's knowledge.  If you feel like this is an issue, start a dialogue with your medical professionals!  I have a very specific plan put in place by my doctors, nutritionist, and myself (cause I'm the one who has to do it) to build my iodine levels.  Be smart and find your balance of advocating for your health and trusting your medical team (whether traditional Western medicine or holistic or a combination, which is what I use).

I hope you never have to travel down this road, or any health crisis road, but if you are struggling, I hereby offer my hand, advice and encouragement to hang in there, because as I have learned your health is nothing to take for granted....

Foodie Adventures...

I figured since I gave updates about my reading challenge that I would do it as well for my 2016 Food Challenge as well....  Here is a link to the Full Challenge

2.  Learn a new cooking technique.

     I made Baked Alaska in February for Baked Alaska Day, February 1st if you were wondering.  It was adventure!  The new technique came with the meringue that would be topping the dessert.  This is what I learned, sometimes the right tool can make all the difference!  I had two batches of mini Baked Alaskans and with the first one I used a hand mixer to whip up the heated egg whites and sugar.  I mixed and mixed and mixed and finally got it to what I thought was the right consistency and applied it to the ice cream and cake.  When they came out of the oven, they looked like bunny slopes, not mountain peaks......  Round two, I figured out a way to heat up the egg whites and sugar in my bowl of my kitchen aid mixer and then used the whisk attachment and whipped up the meringue in no time flat and when they came out of the oven, mountain peaks!!!!  If you want a more details and photos, here's MORE

3.  Go meatless on Monday for a month.

     In January, I made a point of eating more vegetarian meals, not just going meatless on Mondays, but at least 2 other times a week as well.   I continued this in February, March, and April...

40. Do a pantry clean out challenge.  (Don't buy anything except fresh veggies for a month)

      The month of February was when I tackled this and will do this once a year...  Details about it are here....

19. Learn how to sharpen a knife.
24. Learn a new French knife skill.

       On March 9th, I took a Knife Skills class at Harmon's, who knew they had a cooking school, but they do and it's AMAZING!  I learned how to sharpen knives and a whole lot of other great tips.  It turns out that the way I had been holding my knife was not the safest and the difference in the grip while cutting is huge!  I got a new knife out of the class, plus I got to take all of the veggies I had chopped up while learning home....  A great experience.

1.   Clean out and reorganize your fridge.

      This has been  on going and was also partnered with my Pantry challenge.  I found I had 7 different bottles of salad dressing in my fridge.  One of them had solidified....  I now have one and am working on eliminating that one by finding a homemade version I love.  I used up items and really thought about my preferences and tastes.  The best part about it, I know exactly where everything is in my fridge at the moment...

7.  Slow cook something.

     Even though I do not eat a lot of meat, I still find on holidays that I go with the traditional meal, which is generally founded on meat.  St. Patrick's Day with its corned beef and cabbage is no different and I make mine in the crock pot.  Throw it all in the morning and 8 hours later, dinner!  That is why I love slow cookers and use them often!  And if you are a vegetarian, don't feel left out, there are a ton of cookbooks for slow cooking vegetarian.

41.  Master pie crusts

     I made a HUGE step forward in this on pi day, March 14th, when my crust turned out both delicate and flaky!  It was a big improvement from my last attempt.  I found a recipe on Pinterest, of course, that walked me through the consistency part (how much water to add so you have enough to hold it together and not crack, but not so wet that it gets tough).  The other thing that I did was a 1/2 ratio of cold water and cold Vodka.  The vodka keeps gluten from going berserk when beginner crust makers like myself work dough.  I'll make another one this year and see if it holds, but this just makes me happy!

31. Create a well-stocked pantry.

     My pantry challenge made me realize what I want and need in my well-stocked pantry.  This was an eye opener, but now I can make multiple dinners with items I keep on hand.
 
15. Cook dinner at home at least three nights a week for a month

     I view going out to dinner as an event or gathering with friends, so on a daily basis, I cook and eat at home, so this really is not much of a challenge for me.  I achieved this in January, February, March and April and will probably achieve it all the rest of the months of the year.


16. Make perfectly poached eggs.

      Eggs Benedict, here I come....April 16th was Eggs Benedict Day, so that's what I had for dinner and poached eggs are necessary to that meal.  I can't say they were perfect, but they were pretty well formed and were cooked to the right consistency.  :)  Tip of the day...don't crowd the pan, do them in batches...


25. Pack your own lunch for a week.
35. Follow a recipe to the T without making any changes.
47. A salad for dinner at least once a week

     I won't go into details on these as it would be a bit boring, but they were done.

14. Deep-fry something

      This is something that I do not do often, but I have frozen mozzarella steaks in my freezer that I made that need to be fried, so viola, I deep fried something.  It's a quick easy meal that I pare with a salad.

36. Grow something.

    My early garden is in with peas, carrots, lettuce, radishes, kale, and broccoli thriving, and with May here, my other veggies will be going in

This has been an interesting adventure that has made me think more about the food I buy and prepare.  I still have quite a few to go but if you are looking to mix up your eating and food routines, try a food challenge....

Pantry Challenge...

During the month of February I completed a  pantry challenge...
in a world of buy, buy, buy, I took a break.

The goal:

To see what I really use and what is just wasting my money and space by sitting in the cabinets and in the fridge.

The Rules:

The only purchases allowed are fresh produce and dairy products.

The plan:

To clean out and use things in my pantry and freezer.  I had a menu plan that didn't assign days, but listed recipes to make during the month.  I made favorites and new recipes and even made snacks and desserts.

The most surprising thing was this...

my cooking habits have changed, a lot.  I don't eat a lot of meat now, so even after not buying any meat for a month, I still have quite a bit in my freezer.  I use black beans at almost a 3 to 1 ratio to  kidney beans, who knew?  Condensed soups have now been banned since I have found a healthier, less processed, version that I can make from scratch with ease.   I love popcorn as a snack or dessert, coconut oil and dill.

I learned the following....

I would rather spend a bit of time to make something from scratch and know all of the ingredients instead of buying a pre-packaged options.  The breakfast and lunch burritos that routinely fill my freezer are cases in point.

I love to cook.

I love being creative to vary a menu and in finding new recipes to try.

I even had food to eat when I went down with a flu for almost a week....

The Results....

There was a little cheating when my favorite brand of herbs and spices went on sale at 50% off and when I ran out of yeast and couldn't make bread.


In terms of saving money, I did, but I used it to get ahead and do some extra things this month, which was very nice!

I am very glad I did this and will do it again in the future!

A change in behavior....

If you recall, one of my New Year's Resolutions was to break a bad habit or two...

This is about breaking one of them.

Carbonation in the form of Diet Cokes or Cokes....

I have stopped before

and





then







started back up....when I got stressed or to be honest,  just forgot that I had stopped.

I want to end this habit for GOOD!

So, I've been working on a new approach and plan.

Instead of quitting, I have been working on replacing it with a better option.

Why is this different, you ask?

Well, in my past attempts, I quit and then tried to fill the void.  A situation that set up for a sense of deprivation and loss.

My new approach is to not quit, but have other things in my life that replace it.  Basically, let it go out of love and not needing it anymore.

I have set goals for myself to increase my water intake, drink more tea and find options and by doing this I have already made progress.

I am in for the marathon, not the sprint, of this endeavor, so I am not there yet, but I am loving the direction I am going..

Food, Glorious, Food!!!!


I enjoyed the concept of my book challenge so much that when I stumbled on a Food Challenge on Pinterest, I thought why not?

As I read the list, I soon realized some of them are not really challenges for me, like make a recipe from your Pinterest boards (I do this at least 3-4 times a week), so I thought I would swap them out for ones I come up with.....

So, here we go...

1.  Clean out and reorganize your fridge.  Complete.

     I'll probably do this at least a couple of times this year...

2.  Learn a new cooking technique.  Complete.

     I'm going to be baking a Baked Alaska in February for Baked Alaska Day, February 1st if you were wondering.

3.  Go meatless on Monday for a month.  Complete.

     I eat meatless generally once a week anyway, but this will make it more of a focus.

4.  Flip over a fried egg without the yolk breaking.  Complete

      I am horrible at this, a big ole' mess...

5.  Make tomato sauce from scratch.  Complete

6.  Read a nonfiction food book.  Complete

      I'm going to have to do some research for this one.  Any ideas?

7.  Slow cook something.  Complete.

8.  Visit a winery and/or brewery.

      I'm actually hunting for one in Utah...

9.  Organize (and purge) your cookbook collection.  Complete

      This was my first item done and it turned into a massive project.  I am embarrassed and somewhat astonished by how many never opened cookbooks that I had.  I'm donating a lot of them and giving some to my art group for altered books.  I organized my remaining books finding recipes that I used to make all of the time and have been lost in the clutter.  This was a very good thing to do and will help me tremendously as I continue on in this challenge.  1/5/16

10. Cook a new-to-you whole grain.  Complete

11. Master a family recipe.

      Cinnamon Rolls, my mom is a master at them....

12. Make a layer cake from scratch.

      A homemade dessert, I like this challenge....

      I did not visit the Farmer's Market once last year....  grrrrr....

22. Try at least one food that scares you.  1/1/17  I need to go to Whole Foods and buy some Kombucha and then try it....been planning on doing it for a while and STILL HAVE NOT DONE IT!

      Due to the fact that I can not remember the last time I had a steak, this might be leaving the challenge and a replacement will be found.

27. Feast on an ethnic food you've never had before.  Complete

       They are organized as of the first week of January, thanks to my cleaning binge to start the New Year off, so I'll check periodically in the year to see if they are staying that way.

     This gives me the excuse to finally get the pressure cooker that has been on my Amazon Wishlist for a while now...

      This is going to be hard....I generally tweak recipes for all matter of reasons

37. Ferment something.  1/1/17  I've decided not to do this....

      I'm a little worried about this one...  Fermented food and I are not really buds, I find them icky...  Any ideas?  Help?  Recipes?

38. Make an on-point French omelet.  1/1/17  I eat maybe one omelet a year and I have a great breakfast place near my house that does them very well....  I'll stick to frittatas.....

39. Clean and put away dishes immediately for a month.  Complete

My Personal Additions...

40. Do a pantry clean out challenge.  (Don't buy anything except fresh veggies for a month) COMPLETED in February

      In this world of buy, buy, buy, how often do I ignore items I already have?  Plus this will help me realize what I really use and what I don't.

41. Master pie crusts  Complete  :)

      I can make a pie crust, but it can be A LOT better....it's time to practice and get the 'feel' that good pie crust makers have.

42.  Cheesecakes without the cracking  Attempted, will need to try again.

      Poor tortured me, I have to have a cheesecake this year.  How will I ever survive?  Maybe I'll serve it as dessert at the dinner party I've been challenge to have, so I can't overindulge.

43.  Use it or lose it....  Complete  My cooking gadget drawer is full, but it is full of things I use!

       I've switched the hangers in my clothing closet to see what I wear and what just takes up space in there, why not with my gadgets/small appliances?  At the end of the year, I'll donate what I don't use.

44. Come up with 5 ready in under 30 minutes meals  Complete!  and they are really good!

       They can be meals that I make ahead and hang out in the freezer or can be put together with ingredients I keep on hand.

45. 5 items that I currently buy and replace with healthier options (hopefully homemade)

      The more natural I eat, the better I feel..shocking I know, but there are some sneaky things that have added sugar, salt, and preservatives that have easy homemade options.  It's time to seek them out and change...

46. NO FAST FOOD!!!!  (Jamba Juice and healthy options excluded)  I think I ate at a fast food chain twice!!

      I periodically just don't want to cook or don't have time and I fall back on fast food, not often, but I want to eliminate this from my life....  If traveling or out with others, I will choose the best option.

47. A salad for dinner at least once a week  Complete

      Getting more veggies is is never a bad idea

48.  A new recipe a month  Complete

       Who knows, I may find a new favorite or one that I can plug into #44...

49.  More dutch over cooking, especially during the summer  Complete

        This style of cooking is in my heritage and I love it and during the summer, it has the added benefit of not heating up the house....

50.  A cup a tea a day  Update:  I drank more tea in 2016, but not everyday, but I still think this was a success

       I love tea, but have fallen out of the habit of drinking it.  As I am trying to eliminate a bad habit (carbonation), this is a healthy and tasty alternative.

51.  Take a cooking class.  Complete

        Learn something new and get yummy food in the process, I'm in...

Here are the rest of the items that I took off my list and the reason why:

-Perfectly roast a whole chicken..  I have an amazing terra-cotta roasting pan that roasts chicken like you can not believe.  I've had this skill for a while now.

-Break down a chicken...  By roasting chickens periodically and destroying them, I found a video online and learned a while ago.  The key, a very sharp knife.

-Bake bread from scratch..  I very seldom buy bread from the store anymore, because I make it from scratch

-Clean out your spice rack...  As part of a New Year cleaning binge, I just did this not realizing it was on the list

-Learn to cut a whole pineapple...  Pineapple makes my mouth itch and tongue swell..staying away for health issues, plus I hear there is a handy item from The Pampered Chef that does an amazing job.

-Perfectly steam rice...  My rice cooker!  This is an item that I will never be without.  It takes the stress away, plus mine cooks other things as well.

-Make Chicken or Vegetable stock..  I have a gallon of homemade veggie stock in my freezer at the moment.  I take the scraps as I cut veggies and put them in a freezer gallon bag and when it gets full, I use that and add herbs and spices.  It cuts down on my trash and it tastes so much better than store bought.

-Make your coffee at home for a month...  I don't drink coffee, never have, and just don't like it.

-Learn to caramelize onions... Another staple in my freezer, I make a big batch and them portion them out and put them freezer.  If dinner is looking a little boring, defrost and ta-da fancy dinner.

-Churn homemade ice cream...  I got an ice cream maker a couple of years ago and have never looked back.  SO MUCH BETTER than store bought.
